High-moisture extrusion is one of the most important technologies for the production of fibrous, anisotropic meat substitutes. However, the process typically produces dense, barely porous extrudates that tend to have a tough texture and make it difficult to absorb flavors and colors. The study by Dr. Lutz Grossmann and his research team at the University of Massachusetts investigated whether a targeted introduction of nitrogen gas directly into the extrusion process can improve the texture.<br>\nA ZE 12 co-rotating twin-screw extruder from Three-Tec was used. The starting material was soy protein concentrate (66.1 % protein) with a water content of 65 % in the end product. Nitrogen gas was introduced at volume flows of 0 to 40 ml\/min via injection ports specially manufactured by Three-Tec. Two injection positions in the extruder barrel were investigated: the middle area (barrel 3, 100 \u00b0C) and the end area (barrel 4, 120 \u00b0C).<br>\nAs the gas volume flow increased, the density of the extrudates fell by up to 14.8 %. The porosity increased in the middle area from 2.1 % to 9.4 %, in the end area even to 15.3 %. Larger and more irregular pores occurred preferentially when injecting in the end area due to the higher temperature. Hardness and chewability decreased significantly with increasing gas flow. At the same time, the extrudates became lighter in color and optically more fibrous. The elastic anisotropy index increased from 1.35 (without gas) to a maximum of 1.70 with a gas flow of 5 ml\/min in the middle range.<br>\nWhen combined with targeted nitrogen gas injection, the extruder enables precise control of the texture, porosity, and fibrousness of high-moisture plant-based extrudates. The gas flow rate has the greatest influence, while the injection position modulates pore size and the visual fiber structure. Optimal tenderness is achieved at a gas-to-throughput ratio of 0.79 %, while the highest anisotropy is reached as early as 0.098 %. By adjusting both parameters, different meat types can be better mimicked. Furthermore, the increased porosity opens up possibilities for post-processing: porous structures absorb marinades, flavorings, and colorants more efficiently.\n\t\t\t\t\u00abBench-top extruders are an indispensable tool in research. If you don't want to limit yourself and want to carry out test series with different diameters, the laboratory extruder hybrid is the ideal solution.<\/strong><\/p>\n<p>In the early phase of formulation development, researchers often only have access to very small and often cost-intensive quantities of active ingredients. At the same time, the development of an optimal formulation requires numerous series of tests. This combination of limited resources and high experimental requirements places particular demands on the process technology used. With the laboratory extruder hybrid, Three-Tec offers a solution that has been specially developed for extrusion processes on a resource-saving miniature scale.<\/p>\n<p>As a combination device, the parallel twin-screw laboratory extruder hybrid offers a choice of two different extruder sizes. Three variations are available, each with a choice of two screw diameters (5, 9 or 12 mm). The variant with a 5 mm screw diameter and an L\/D ratio of 15:1 in particular drastically reduces the consumption of active ingredients or target materials thanks to an extremely small empty volume of just 1.2 cm\u00b3. Very small batches can be produced from as little as 1 gram. As only very small residual quantities remain in our laboratory extruders, a high yield of the materials used is achieved. With an initial quantity of one gram, for example, an extrusion quantity of 0.7 to 0.8 g is realistic. The results provide a reliable basis for reproducible scaling up to larger production scales.<\/p>\n<p>A key feature of the Hybrid laboratory extruder is its high flexibility. Thanks to the universal use of heating cartridges, cooling systems, die plates, and pressure and temperature sensors, the extruder can be converted from a 5-mm to a 9-mm or 12-mm screw diameter in just a few minutes. This significantly expands the range of applications compared to conventional laboratory extruders. The modular design of the screws\u2014featuring feed, reverse feed, mixing, and kneading segments\u2014even in our smallest extruder\u2014allows for precise adaptation to a wide variety of extrusion processes.<\/p>\n<p>With the laboratory extruder hybrid, Three-Tec combines resource-saving work, high flexibility and precise process control.
